Grahamwiches

Well... I was going to keep this post for a few weeks from now, but I just can't... because today, folks, is National Ice Cream Sandwich Day!! My contribution to this marvelous day of observance is ... Grahamwiches!!



My college roommate my junior year at Penn State turned me on to these lovely little things. They are not quite ice cream sandwiches- but close enough, considering how many calories you can save! These babies are only about 145 calories for one- not too shabby!

I have made them in various combinations and the possibilities are only as limited as your imagination! The instructions below are for the chocolate and peanut butter combination. But I also have pictured Chocolate and strawberry- they are my favorite!

Other combinations I have tried are full chocolate and full peanut butter (Meaning peanut butter on both cracker halves and chocolate on both halves).

Pictures below is what you'll need to make your own:






The Basics (16 servings):
16 Graham Cracker sheets (plain, honey, cinnamon... whatever your heart desires!)
1 c. Cool Whip
1 c. Semisweet chocolate chips
1 Tablespoon of butter
Peanut Butter

1) First, melt the chocolate chips and butter together in the microwave. I microwaved mine for 45 seconds, stopping every 15-20 seconds to stir it. The end product is like a paste, which makes it easier to spread on the graham crackers.

2) Next, spread each cracker half with your choice of goodies. I used the melted chocolate and peanut butter. I used about 1 teaspoon of each for each cracker half. 


3) Last, place about 1 Tablespoon of cool whip between the cracker halves and freeze on a cookie sheet for 1 hour- serve straight out of the freezer.

Chocolate and Peanut Butter Grahamwiches:




Chocolate and Strawberry Grahamwiches:
(Instead of peanut butter, I used chocolate on both sides and I added about 1/4 cup frozen strawberries in syrup that I mashed and mixed in with the cool whip. They are fresh, but satisfyingly sweet!)
