On this New Year's Eve...

I usually don't make New Year's resolutions, or if I do they are more or less the same as everyone else's: eat healthier and workout more often!

This past year, however, lots has changed and I want to make 2013 an amazing and exciting year! So, I have decided to set some New Year's resolutions and share them with you to keep me accountable ;)

1. Complete a 30 day photo challenge and blog about it- and just blog. more.

2. Learn the ins and outs of Lightroom (I already know it fairly well) and start to tackle Photoshop Elements (this one is scary, as I just received it for xmas and have been playing around. I will admit, I am super overwhelmed!). Also, to keep snapping photos and improving my camera skills. All this is in the hopes to someday call myself a "professional photographer"... that's kind of three resolutions in one,  but who's keeping track.

3. Take time to stop and smell the roses. Sometimes I get caught up in the day to day, especially now with a little one. I'm all about sticking to the routine and making sure we get things done as efficiently and timely as possible. Sometimes I forget to stop and breathe and enjoy- with her and everyone, including my handsome husband who reminds me to slow down every once in a while.

4. Be energized and motivated! As much as I enjoyed being a stay-at-home Mama, and am sad to start work next week, I'm hoping going back re-energizes me. I have been living in sweats for the last nine weeks, not being able to workout until two weeks ago, not getting a shower until 8pm when the hubs returns home, leaving the house uncleaned because I just don't have the energy or motivation and eating like crap, because I can.

5. This one kind of goes with resolution #4, but get fit and healthy! I will admit, I am not a healthy eater. I would eat carbs and sweets all day everyday if my husband wasn't around.  I also don't like working out, but when I do... I feel marvelous. Not to mention that since being pregnant and giving birth I have lost ALOT of strength, so much so that I used to be able to do 20 push-ups and at 7 weeks postpartum, couldn't even do one because my abs were so weak! I was appalled that I  had to do the girly version with my knees on the ground. Ugh. Nothing like starting from the beginning!

Does chocolate make you lactate?

 Well... not exactly. However, while researching ways to increase my milk supply (I will be going back to work in a couple of weeks and wanted to have some to freeze for when I'm gone) I came across this recipe for "lactation cookies". They contain some special ingredients: Brewers Yeast and Flaxseed meal to help with lactation. I was skeptical, but who wouldn't love an excuse to eat cookies all day!?

My version is below, with just a few tweaks.

  • 3/4 c butter
  • 3/4 c sugar
  • 1 c brown sugar
  • 4 T water
  • 2 T flaxseed meal (DO NOT substitute)
  • 2 Large eggs
  • 1 t vanilla
  • 2 c flour
  • 1 t baking soda
  • 1 t salt
  • 2 T Brewers Yeast (DO NOT substitute)3 c Thick cut oats
  • 1 c Dark Chocolate chips
  1. Preheat oven to 375.
  2. Mix 2 T of flaxseed meal and water, set aside 3-5 minutes.
  3. Cream butter and sugar.
  4. Add eggs.
  5. Stir flaxseed mix into butter mix and add vanilla.
  6. Beat until well blended.
  7. Sift: dry ingredients, except oats and choc chips.
  8. Add butter mix to dry ingredients.
  9. Stir in the oats and then the chocolate chips.
  10. Using a medium cookie scoop, drop onto baking sheet.
  11. Bake for 8-10 minutes.

It's been almost a month!

 I assumed that with a newborn I would have plenty of time to keep up with my blog. BOY, was I ever wrong! My little sugar bean doesn't sleep all that often- about 3-5 hours less a day than the average newborn, which leaves little time for Mama to keep up with her blogging!

I also have been swamped with orders for boot cuffs. I never could have guessed how much of a hit they would be! I am still six orders behind, and feeling guilty for sitting here blogging instead of crocheting away. But, a girl needs a break, right?!

Anywho, the above picture sums up my life right now in more ways than one.

First, it obviously is in reference to my little love and the work that it takes. Being a mom is hard! For the first four weeks I felt as though my body was battered and on this planet for the sole purpose of the use of my daughter, and I wasn't even exclusively breastfeeding! I still am not exclusively nursing, in fact, I hardly am at all. I mostly pump and try to nurse her, at least once a day- usually in the form of a snack, since she loses interest after receiving a bottle so much. This is very disappointing for me, but is my own fault for not toughing it out with nursing in the beginning. Lesson learned if there is a baby #2! I mean, after giving birth naturally, I thought that would be the hardest and most painful, but I think breastfeeding gives natural childbirth some stiff competition! (mainly for the fact that labor is hours and nursing is weeks!).

We're also following the Babywise method for Everleigh. For those of you that aren't familiar, the concept is to get baby on a routine, which will lead to her sleeping through the night at an earlier time than most, or some, other infants.  It also has other great concepts, like teaching the child to be independent and able to self sooth, etc. Thank God, some friends have used this method as well! They have become my mentors in this quest to achieve nighttime sleep for all! Babies are confusing, and right as we think she's got the routine, she changes it! However, she has started to smile and just yesterday laughed out loud in her sleep, which makes it all worth it!  <3

Second, I am super excited to be getting back into photography! Obviously, after having a little one, I am taking photos more than ever. I'm so excited to continue to learn as much as I can about my camera and how to take great photos. I love nothing more than a great photo to capture a moment in time. I am so thankful to no longer be nauseous when just thinking about photography! I literally had to unlike a lot of the photography sites I liked on Facebook because if they showed up in my news feed earlier in my pregnancy, I would instantly be nauseous. So weird. I can only attribute it to the fact, that my morning sickness first started when I was in Nebraska, doing a photo shoot for my cousin's adorable little girl. Even those pictures, looking at them now, make me kind of sick.

But, now that my pregnancy is over I am nausea free when it comes to photography and continue my quest to become a great photographer! Luckily, Everleigh isn't old enough to get tired of me snapping her photo for practice... though I'm sure that day will come much sooner than I would like!

Mini Crunchy Caramel Apple Pies

WOW... Motherhood is exhausting! I was hoping to be able to keep up with my blog posts as much as I had been, but I've been finding out that it's hard to keep up with just going to the bathroom! Luckily, the wee little one has been snoozing for a bit now and so I thought I'd take this chance to share this yummy recipe with you all!

Now, normally I use my grandmother's pie crust recipe, but I was 37 weeks pregnant and a little bit lazy when I made these! So... I bought a refrigerated pie crust. I tend to find that Pillsbury is quite good.

Mini Crunchy Caramel Apple Pies

Yield: 16-18 mini pies

1 refrigerated pie crust

1/2 c. sugar
3 Tbsp. flour
1 tsp. cinnamon
1/8 tsp. salt
3 granny smith apples, peeled and cut into small cubes
2 red delicious apples, peeled and cut into small cubes

1 c. packed brown sugar
1/2 c. flour
1/2 c. quick cooking oats
1/2 c. butter
1/2 c. caramel topping
1/2 c. pecans, chopped (optional)

Preheat over to 350 degrees

1. Roll out dough, and using a 4" biscuit cutter (or bowl) start cutting out circles to place in greased 12 cup muffin pan.
2. After all crusts are placed in muffin pan, place them in the fridge while you prepare the filling.
3. Peel and chop apples then mix all ingredients for filling in a large bowl.
4. Take muffin  pan out of fridge and place a large cookie scoop full of pie filling into each cup, leaving about 1/8-1/4 inch space in the top of each cup for your topping.
5. For the topping, place brown sugar, flour, oats and cubed butter into a bowl. Cut the butter into the mixture until it becomes crumbly. Sprinkle this evening over each mini pie.
6. Bake in 350 degree oven for 25 minutes or until topping is slightly browned.
7. Drizzle caramel and pecans on top of each pie directly out of oven.

*NOTE: The tops of the pies will cave in once you add the caramel drizzle on top.

She has arrived! My delivery story.

Our daughter, Everleigh Kate Winchester, arrived at 6:03am on Saturday October 27, 2012. She weighed 7lb 1oz was 20 inches long and is perfect!

Allow me to now share my delivery experience. I will not spare many of the details, so for those of you who want instant birth control, this may be for you! Just kidding.... Sort of!

For those of you who know anything about pregnancy, or are in the health field, you should know most of what I discuss here...

So, let me start at the very beginning. At 3am on Thursday morning, I awoke to a feeling that felt something like I may have gotten my period. I had been on high alert for weeks waiting for my water to break and thought maybe this was the beginning. It was. I had lost a small part of my mucus plug and had what is referred to as "bloody show" (not as scary or as bloody as it sounds!). After doing lots of googling and looking in my nursing books I was informed labor could be hours or weeks away. Lovely. I was ready to get the show on the road!

That afternoon at 2pm I started to get contractions. They just felt like bad menstral cramps. Nothing I couldn't handle if it wasn't going to get much worse than that! My husband was at work, so my sister in law was nice enough to come hang out with me to keep my mind occupied and be there in case I needed to go to the hospital.

I was determined to wait at home for as long as possible before going to the hospital. I also knew the rule: contractions five minutes apart, lasting for one minute for at least one hour. As the evening progressed and my contractions grew stronger, falling into the "rule" and getting increasingly worse pelvic pressure, I decided it was probably time to go to the hospital. I wasn't bent over screaming in agonizing pain like you see in the movies, but I figured that's all exaggerated, right?

At about 9pm we arrived at the hospital. I was sent up to the unit after calling the doctor on call and alerting them I was on my way. While checking in at the front desk on the maternity unit the secretary asked why I was there. I stated I was in labor (duh). She said usually she could tell when women were in labor so she was just checking that that is the reason I was there. Bad sign #1. They kept me until about 10:30pm and sent me home saying I was only about 1cm and although my contractions were pretty strong and fell into the "rule" (although they went to about seven minutes apart once I got hooked up to the machine. It was like they got stage fright!) I was only in the very early stages of labor and could be like this for days. DAYS!!! They gave me a low dose Ambien to help me sleep through the night and estimated they would see me back in 12-24 hours.

I was able to sleep for about 5 hours Thursday night and woke up still having contractions on Friday. Kyle stayed home from work to be there should we need to go to the hospital again. Throughout the day my contractions grew stronger until about 1:30pm at which point I was breathing through them and they were 3-5 minutes apart, lasting 40-60 seconds and clearly it had been lasting for longer than an hour! I called the doctor and they told me to go to the hospital. I waited until 3pm because I still had a feeling they were going to send me home again and I didn't want to be the dummy that kept coming in and wasn't ready to go! So, we arrived on the unit at 4:30pm and they hooked me up to all the machines. They said I was definitely having strong, regular contractions and her head was very low in my pelvis but I was only 1-2cm. After keeping us there for two hours, they were going to send me home.... again. I was on the verge of a breakdown! We lived 40 minutes away and had been there twice already in the last 24 hours! I was determined I was staying!

Earlier in the evening when they checked my cervix, I noticed some trickling down there, but assumed it was from the lubricant they had used. However, upon standing up to get dressed, after they discharged me, I noticed another trickle. I decided to say something since I was at my wits end and was determined to not be sent home if I was getting to the end of my latent labor phase! I said something to the nurses, one of whom was a miserable old woman and grumbled. They performed three different tests to determine if, in fact, it was the membranes that had ruptured. The first two came back negative, however the ferning test came back positive- I was staying!!!

We spent a few more hours in the triage room before we moved to our birthing suite, which was very nice, I might add. That was my home from 9:30pm Friday night to about 8:00am Saturday morning.

I had gone into this with the thought that I was going to try to deliver without the help of any meds, except Nubain, an opiod that takes the edge off the contractions.

First, the nurse hooked me up to Pitocin and the resident ruptured the rest of my membranes to get things going. My contractions were strong and getting painful so when I was about 5-6 centimeters I asked for Nubain. Little did I know that I couldn't receive this throughout the duration of my labor. I saw the syringe and knew it was a push med (which isn't given as a continuous drug). I asked if I could get more and the nurse told me no, that it could make the baby sleepy, so they liked to give it earlier in labor, as opposed to later. GREAT. Well, I was going to take what I could get!

Hours past and I reached 7 centimeters. Then it took what seemed like several more hours for the resident to come back from an emergency c-section to check me again, stating that I was 9 centimeters. It was at about that time that I was fervently asking for the epidural. The nurse looked me in the eye and said "You're doing great. You've gone this far, do you really want the epidural now?" I asked how much worse it was going to get and how long it was going to take. She stated the last centimeter could take five minutes to fifteen and the pushing could be thirty minutes or three hours... there was no telling. Well, I decided to just go for it.

It only took about ten minutes for me to get to 10 centimeters and let me tell you... I wanted to push! At that point it was like a whirlwind with the doctor coming in the room, stirrups being put up, bright lights being turned on and lots of people in the room. I then continued to pushfor an hour and forty minutes before Everleigh made her way into this world!

I cannot describe to you the excruciating pain I felt upon pushing her into this world. That was by far much worse than the contractions that lasted for days!! I ended up having to get an episiotomy (boo) which has made recovery a bit harder and unpleasant.
So far we are all doing well and adjusting. Her cord fell off yesterday which was an experience. For almost two days it had a horrible smell that emanated all the way through her clothing- it was horrible! I was a bit concerned it may be infected it smelled so bad! However, I have been reassured by nurses and experienced mommas that this is normal. At this point I'm just glad the smell is gone!!
Now on to conquering breast feeding, which makes me want to cry every time she puts her tiny fists to her mouth. I'm starting to forget labor pain a little bit, but at this point I think breast feeding may be harder than labor!! We are both learning and working at it, but it is not my favorite!!

Zucchini Tomato Bruschetta

We often end up wasting veggies in our household for some reason, so one day when we had a lonely zucchini and plum tomatoes that needed to be used, we decided to throw them in a pan with some olive oil, garlic, salt and pepper and cook them up to have as a side. I was pleasantly surprised by how delicious they were! They have become a favorite side of ours.

This past week we had appetizers one night for dinner. My husband loves a good smorgasbord of things, so he is totally OK with having just a bunch of appetizers and a nice beer for dinner (love him for that!). 

I knew I wanted to have bruschetta, but not the traditional kind. Mostly just because i'm pregnant and bruschetta bothers me even when my digestive tract isn't smashed and shoved up to my throat! So, I thought it might be yummy to have the zucchini tomato mixture that we like as a bruschetta topping. Was I ever right! They are delicious!

Zucchini Tomato Bruschetta

1 Tbsp. olive oil
5 Plum Tomatoes
1 medium zucchini
1 tsp. garlic
salt and pepper to taste
1 long french baguette

1. Preheat over to 450 degrees.
2. Meanwhile, chop up the zucchini into quite small pieces, a little larger than a pea
4. Chop up the tomato into small pieces, about the size of a dime (these will cook down, so you don't need to cut them as small).
5. Place about 1 Tbsp. olive oil and 1 tsp. garlic into a pan and cook for about 1 minute.
6. Toss zucchini into the pan and cook for about 5 minutes, followed by the chopped tomato. Salt and pepper to taste. Cook for an additional 5 minutes, or until zucchini are tender. 
7. While veggies are cooking, slice the baguette into 1/4-1/2" slices. Coat one side of each slice with olive oil using a pastry brush. Place on a cooking sheet, olive oil side down. You will want to toast them in the top rack in your oven, so you may need to do these in batches, depending on the size of your oven. Toast for 5-6 minutes, or until the bread just begins to turn golden brown.
8. Arrange about 1 Tbsp. of the zucchini and tomato mixture onto the bread slices. Serve warm.

Etsy Shop Spotlight: For Such A Time Designs

I came across For Such A Time Designs Etsy shop while browsing one day and fell in love! I have always loved stamped metal, whether it be pendants, flatware, tags... you name it. But I fell upon a goldmine of hand stamped, repurposed flatware when I came across this shop! Look at how adorable her shop is! You can see by the large selection of items (169) you have lots to choose from!

There are amazing items in this store. The owner, Aly Nickerson, designs and makes all of the pieces herself. I LOVE that there are matching his and hers sets as well as the funny and clever sayings artfully stamped on each piece. I love so many it was hard to pick a favorite, but for me I think my favorite is this one:

You better believe that baby is on my Christmas list! I adore cereal... I would eat it for all three meals of my day!

Apple Cranberry Walnut Baked Oatmeal

This little recipe of mine was inspired by the Quaker Real Medleys Apple Walnut Oatmeal

I had purchased these when I was doing biometric screenings at work and was getting up at 3am and 4am and knew a CLIF bar wasn't going to cut it for a pregnant lady. So, I picked up these healthy little delights and LOVED them. I wanted to make little packets of my own, because these are quite expensive at almost $2.00 for one little container. Which, don't get me wrong, will definitely leave you feeling satisfied! But, I then decided to make a baked oatmeal version instead.

Baby Bump & Nursery Update

I know, I know... my last post was baby related! I had planned on posting a recipe today, but I haven't posted a bump picture in while, and at this point, the picture I have will be almost a week old if I don't post it soon!

So, here it is: 38 weeks and 5 days (as of Saturday 10/20)

CRAVINGS: I have been craving sweets like crazy for about the last two to three weeeks. My weight had been staying pretty consistent, however, after staying home last week, I've gained about 1.5lbs! Not cool. This little girl needs to hurry up and get here before I continue to rack up the pounds I'll have to lose post baby! We hit up the Collegeville Farmer's Market to get some ICED by Betsy cupcakes I've been craving. I got one of each flavor... a half dozen. Kyle has only had one, and there is only one left. You do the math. Plus, I had an ice cream cookie sundae on Saturday night at dinner and Breyer's Reece's Ice Cream last night... Oy Vey!!

BUMP: This child is getting heavy!! I feel like I'm carrying around a ton of bricks in my midsection (and sometimes in my pelvis!). She has finally stopped moving quite as much as she had been (don't worry, her movement is still steady enough!) which is nice, since there is literally no more room for her to move. I have an appointment this Thursday and would love to hear some news that I've progressed, however, at this point, I'm thinking I'll probably have to be induced, which I didn't want. However, I also am super uncomfortable, so it is what it is!

NURSERY: The nursery is just about complete. There are only two things left to finish. Well, there are a few more than that, but I mean things that need to be finished shortly. First, is the hamper. I had this lovely idea that we could conceal the hamper in the closet, next to the changing table. However, that hasn't worked out quite as planned. So, now we're looking at just getting a trash can to use with the PUL liner I bought for her cloth diapers. Not quite as thrilled because it will have to sit out, but, at this point my hubby and I are out of ideas! We also need to figure out shoe racks. I should say... we need to get them. We are using IKEA spice racks, however, they have been sold out for months and they're not supposed to get them back in stock until the end of November, so that project will have to wait! My first week of maternity leave... a recap

I had been counting down the days to my maternity leave... literally about 160 days out from the date I was supposed to leave! Now that it's here, I don't know how much I like it! At first the week drug by slowly, but now that it's Friday, I can't believe how fast it's gone! I feel like I've accomplished nothing on my To-Do List... which grows by the day!

Stocking Stuffers Treasury

I can hardly believe this year has gone as fast as it has. It seems like just a couple of months ago I was posting about our possible fertility woes, and now in just a couple of weeks we'll be holding our little baby girl!

This is my most favorite time of year, fall is an absolutely gorgeous season and the excitement and tradition of the upcoming holidays is something I've always enjoyed and cherished.

NEW Boot Cuff design

I had mentioned last week that I was working on a new pattern for boot cuffs. I have finally completed the pattern, and the cuffs. Check them out below and let me know what you think!

I wanted to try a more traditional looking cuff. A lot of the cuffs I've been making and that I offer in my Etsy Shop are a little more dressy and girly. I wanted a good old pair of boot cuffs for those cold nights in the mountains (daydreaming about the Poconos!). I used a combination of stitches for the body of the cuff and ended up with a ridge-like pattern. Hence the name Crochet Ridge Boot Cuffs.

Ah... traditional and cozy!
I love the detail of the stitches you can see in the above picture, as well as below. I've used a combination of double crochet and half double crochet stitches as well as some different techniques in stitches to get the ridge/line look of the body of the cuff.

Eggplant Panini

This past week I decided to try a different sandwich for dinner, other than our normal staples. I found this recipe on foodgawker and had it saved in my favorites. Recently, we've been eating a lot more eggplant. These were delicious! I even had the leftovers cold for lunch and it was still delicious!

Eggplant Panini

  • 1 large eggplant, about 12-14 oz
  • Olive Oil
  • French Baguette, cut into 1/4" pieces
  • Fresh mozzarella cheese, sliced thinly
  • Pesto 
  • 1 Tomato, sliced thinly

Slice the eggplant into 1/4-inch thick slices. Place the slices on a paper towel and season with salt; set aside about 15 minutes. This will help draw some of the moisture out of the eggplant. Pat the eggplant dry with paper towels.

Preheat the panini grill. Lightly drizzle olive oil over eggplant,  season with salt and pepper. When the grill is hot, grill eggplant about 7-8 minutes, turning once half way through. Set aside.

Slice the bread, diagonally, into 1/4" slices and place 1 slice of grilled eggplant, 1 slice of mozzarella, 1 teaspoon of pesto, and 1 slice of tomato on each sandwich. (I used a french baguette for my panini's which made them more of an appetizer size. We just had a few sandwiches each.)

Lightly spray the top of the bread with oil. Place on a panini press and close until the cheese melts and the bread is toasted.

New Ideas...

I'm working on a new boot cuff pattern this evening. It's a little more casual than the boot cuffs currently at Elizabeth and Lou, I can't wait to debut it later this week! I love coming up with my own designs, it's just as much fun as coming up with my clip designs!

This will be my last full week of work before maternity leave, my last day will be the 15th. I plan on spending my time off stocking up on inventory for the quickly upcoming Black Friday, since I will likely have a one month old a that point!!

Tuxedo Pudding Cookies

For these little delectable delights, I used my most favorite chocolate chip cookie recipe. For those of you who follow my blog, or know me, you know I have a bit of an obsession with Jell-O pudding in baked goods. I think it makes everything taste better- and I love the dense texture!

I decided to branch out of my normal chocolate chip pudding cookie recipe and try the chocolate Jell-O pudding. I have been in the mood for the sweetness of white chocolate, so I decided for this recipe I would use the chocolate Jell-O pudding as the base for the cookie and add white chocolate chips for some sweetness, and mini semi-sweet chips for a subtle hint of semi sweet.

Bump Update- So ready to be done!

Welcome to 35 weeks and 5 days. I so called it when, at the beginning of this pregnancy, I said I would probably end up being miserable at the end... I am! Just kidding (sort of). It's still been a fairly easy and uneventful pregnancy, and I really probably have no right to be complaining.

Bolognese Sauce

I am generally not at ALL a fan of meat sauce. I don't even like spaghetti sauce with meat. However, my Father-in-Law makes the BEST bolognese sauce. I had a craving for it a few weeks ago and my darling husband made it for me while I was away. I came home to a fully prepared, delicious dinner. It fed us for a few meals and we still have a container in the freezer. (I'm saving that baby for when we need quick, simple meals come a month from now!). 

This is the perfect meal for a fall Sunday!

Gender Reveal Party

So, I know this is like wayyy late, but I figured better late than never to share! Back in June we had our Gender Reveal party for little Everleigh Kate.

The plan was this... we had an ultrasound appointment scheduled for Thursday, June 7th. The party was planned for Saturday, June 9th. I was under the assumption, that the way in which these parties worked, was that everyone found out the gender together. However, I think perhaps I was wrong. When I told everyone that we were waiting to find out on Saturday, they were all surprised.... (Isn't that the way it was supposed to work... I didn't know!). Anyway, my mother-in-law, the morning of, planted in my head that we could still find out and just not tell anyone... hm. My husband already wanted to find out, so I thought... OK, sure... let's do it!

So, not quite the original plan, but it was still a great little shindig. The color theme was grey and yellow... I'm not a huge fan of pink and blue. Check out some of the photos below!

The Voting Station: We had a list of names which we displayed for everyone to vote on. We already had a few of our favorites picked out... but we wanted to see what everyone else's votes were too! 

For the board I simply used a piece of foam board that I covered in fabric and then printed up the names and cut them out, then taped them to the board. For the titles I used a coordinating scrapbook paper with letter stickers.

These cute little envelopes I purchased at A.C. Moore. I got enough so that everyone could vote for their favorite girl name, and boy name. I used clear acrylic stamps to spell out "girl" and "boy" and then stamped the front of each envelope. 

This is an old cookie jar that was my grandmothers. I keep it around for random uses... such as this! These cute little chalkboard labels I found on Etsy.
